ABOUT ME
Aloha! My name is Marc Kusaka and I am a Registered Dietitian Nutritionist, Online Health Coach, and an American Council of Exercise Fitness Nutrition Specialist. I was born and raised on the Island of Oahu in Hawaii and moved to the Greater Cleveland area of Ohio in 2019.
I received my Bachelor of Science degree in Dietetics from Kansas State University in Manhattan, Kansas and also completed my dietetic internship and received my Master of Science degree in Public Health Nutrition from Case Western Reserve University in Cleveland, Ohio.
Before I got into dietetics, I was in the culinary industry for over 14-years. I was a sushi chef that specialized in Japanese cuisine. One of my greatest moments during that time, was working for Iron Chef Masaharu Morimoto, which helped take my career to new heights.
Considering what I had accomplished as a chef, there have been times where I would get asked why I decided to pursue the field of dietetics, and this is what I would say… Aside from loving the heavy science aspect of the profession, it all laid down to seeing friends and family, and even myself, develop health complications. I did my research and noticed how the nutritional value of food can heal our bodies from within. I knew how to combine ingredients and cook food, but I wanted to know the why, what, and how it helps. I wanted to do more, so I hung up my knives and my apron and took my knowledge of food up a notch, and the rest became history.
